Snapguide Share: Mexican Monday Chicken Enchiladas!

Today is a blog first for us were sharing a recipe! While I'd like to pretend I'm a fabulous cook the truth is Joe is the real brains behind the kitchen operation and I really only five, maybe six go to recipes that I can whip up (and by whip up I mean follow the directions).
